Mom's Ultimate Chicken Soup: for the body & soul

This Instant Pot chicken soup is on constant rotation at my house in the fall/winter. It is my go-to when anyone in the house is feeling less than awesome. I always add a couple drops of Thyme Vitality Essential Oil before serving for a burst of flavor and an extra immune system boost! (I only use Young Living vitality essential oils when cooking)

  • 1 Cup each, diced sweet onion, carrot, and celery

  • salt & pepper to taste

  • *sautee in instant pot with 1 Tbs olive oil & minced garlic

  • 4-6 frozen Chicken Thighs-place on top of sautéed veggies

  • cover with about 4 cups chicken broth or bone broth

  • cook on “meat” setting-allow slow release

  • remove chicken, dice, & add back to pot

  • top with 1 cup fresh chopped spinach-allow to wilt

  • add 2 drops Thyme vitality oil [if desired]

  • add more salt & pepper if needed

This recipe is so easy, and so flavorful, I find myself craving it on cold winter days. Not to mention how soothing it is to the stomach. Bone broth is full of collagen and gelatin, which helps not only muscles and joints, it’s a great natural way to rebuild the stomach lining. If you have leaky gut, bone broth is a must in your diet!

Want to take it up another notch? Add some turmeric! Turmeric is well known as an anti inflammatory spice that has been used for hundreds of years in China and India, and is also great for the brain! Turmeric is rich in phytonutrients that may help protect the body by neutralizing free radicals and shielding the cells from damage. Not only has it been used to boost flavor in recipes for centuries, it is a staple in ayurvedic medicine.

It will add a more earthy flavor, and give your soup a warm yellow color. Beware though, it does stain your countertops bright yellow!
