Leftover Turkey & Stuffing Waffles
I love Thanksgiving food, but to be really honest with you, one meal is enough for me.
Growing up, we never did anything fancy with the leftovers, just pulled everything out of the fridge to re-heat and make a plate the same as the first time, until everything is gone.
Occasionally, I’d just add some turkey to a dinner roll with a little mayo and call it good.
Maybe it’s because I’m older, or maybe it’s because I don’t want to eat the same meal several times in a row, but I needed something a little bit different this time around.
I’d seen a few different food blogs post similar recipes for stuffing waffles, and I thought, “hmmm, that’s a fun way to shake things up!” so, I gave it a test run, and you’ll never guess what happened…my kids LOVED them! Like, so much, that they asked if I could just make that for Thanksgiving dinner. HA!
Not sure the rest of the extended family would go for that, but these are definitely on the menu for leftovers!
🍁Turkey & Stuffing waffles🍁
4 cups leftover stuffing
1 cup diced turkey
1/4 cup chicken/turkey broth (or just enough to make the stuffing wet)
1/4 cup cheese of choice-I used shaved Parmesan (crispy cheese is the best cheese)
-make a patty and cook on waffle maker-
I personally thought it needed the acidity and tang from cranberry sauce, so I recommend topping with that, but I’m sure some gravy would be just as delicious!
Perhaps we’ve stumbled on a new tradition??
